Abstract

The aim of this project is to assess the risk of salmonella infection from pork sold in Finland. The assessment will be done according to the standard of Codex alimentarius commission for microbiological risk assessment, and, as far as possible, the whole production chain from field to fork is included. The final aim is to identify the most important sites for risk management procedures.
